Nutrition for fat loss

Dear Mr Kurz,

I'm getting back into boxing and weightlifting. My primary objective is to lose fat and gain muscles.

- After a "technical" training, I eat balanced meals rich in proteins and average in carbs and some vegetables ;
- After a "strength" training, I eat meals rich in proteins and average in carbs and some vegetables ;
- After an "endurance" training, I eat balanced meals rich in proteins with no carbs and I add vegetables ;
- If I don't train, I cut on carbs only during the diner and I add vegetables and proteins.

Generally, I eat oats and cottage cheese for breakfast. At 10:00 am, I eat oleaginous fruits and cottage cheese and I do it again at 16:00 just before boxing or weightlifting.

[1] How can I be sure that my body use mainly bodyfat during a workout ?
[2] Is my nutrition correct or am I mistaken about something ?
